How To Roast Garlic

Roasted garlic is a wonderfully flavored, diverse food that is simple to use. This article will explain how to easily roast your own garlic, use it in some great recipes and also talks about a bit of the history of garlic.
How to roast garlic:
Pre-heat your oven to 375 degrees F, or 190 degrees C.
Peel the garlic, without breaking apart the cloves.
Place the garlic, head down, in ¼ cup of water in a small, shallow baking dish.
Drizzle overtop 1 tablespoon of good quality olive oil.
Cover with tin foil.
After half and hour, baste with oil again.
Leave in the oven for at least an hour, pierce with a thin knife and if they are soft they are roasted.
Learning how to roast garlic is very simple. To quicken the roasting time, break the cloves up. Use as much garlic as you need, bear in mind that you should probably use roasted garlic within 3 days.
How to roast garlic: Garlic mushrooms:
Ingredients:
1 pound of fresh mushrooms, sliced
6 shallots or white part of scallions, thinly sliced
2 cloves roasted and minced garlic
2 Tbsp minced parsley
2 Tbsp fresh lemon juice
1/2 Tsp salt
1/4 Tsp freshly ground pepper
4 Tbsp butter, cut in small pieces
This is a different kind of recipe for your barbecue, as you need to cook over a fire. Prepare a medium sized flame. In a large bowl mix your mushrooms, shallots, garlic, parsley, lemon juice, salt and pepper. Place the mixture on a large piece of tin foil that has been folded in half (heavy duty preferably). Then dot the mixture with butter and wrap it securely. Make sure nothing will leak out. Place your packet on a grill over the flame (4-6 inches from it). Turn 2 or 3 times during cooking. After around 15-20 it should be done. This recipe will serve 6 people.
How to roast garlic: Forty-Clove Chicken Filice:
Ingredients:
1 frying chicken, cut in pieces
40 cloves freshly roasted garlic
1/2 cup dry white wine
1/4 cup dry vermouth
1/4 cup olive oil
4 stalks celery, cut in 1-inch pieces
1 teaspoon oregano
2 teaspoons dry basil
6 sprigs minced parsley
Pinch of crushed red
Pepper
1 lemon
Salt and pepper to taste
This is a very strong garlic recipe, not for the faint hearted!! Place chicken pieces into shallow baking pan, skin side up. Sprinkle all ingredients evenly over top of chicken. Squeeze juice from lemon and pour over top. Cut remaining lemon rind into pieces and arrange throughout chicken. Cover with foil and bake at 375 degrees F. for 40 minutes. Remove foil and bake an additional 15 minutes.
