How To Make Pancakes

By Leeanne Utiger
Making pancakes can be one of the very easiest deserts or breakfasts you ever make. And they are delicious to go with it.

To make 8 - 10 you will need:

1 cup plain baking flour, 1 teaspoon baking powder, < teaspoon salt, 1 egg, approx > cup milk, 1 tablespoon sugar, little butter to cook them in.

Sift the flour, baking powder and salt into a bowl. In another bowl, beat the egg and sugar until thick. Add with the milk and the sifted ingredients. Mix until smooth. Cook tablespoons of the mixture in a hot greased/buttered non-stick frying pan. Turn over when the top bubbles and brown the other side.

That is the simple basic pancake mix. Try adding sliced banana with a dollop of fresh whipped cream. Or in addition to the banana in the summer months, also try these delicious pancakes with some fresh summer fruit, such as raspberries or strawberries. Devine!

If you choose to, try some sprinkled nutmeg and a drizzle of maple syrup over the top. You can even make a layered pancake stack. Place one pancake on the bottom of your plate, top with some sliced fruit/s of your desired choice, a dollop of fresh whipped cream, a drizzle of maple syrup, and then repeat until the required pancakes for your liking are on the stack. Very delicious and very fulling. A great Sunday breakfast, or special breakfast served up to another as a treat.

In addition to the basic pancake mix and all the added trimmings, how about try making some Dutch Layered Pancakes.

You will need:

500 grams apples (peeled and chopped), I packet of pre-mix pancake mix, easily located at any supermarket within your own area, 2 teaspoons icing sugar, < cup sugar, = teaspoon cinnamon.

Put apples, sugar and cinnamon into a pot. Cook these until the apples are pulpy. Mash this with a potato masher until they are smooth. Make up your pancake mix according to the directions on the packet. Place a pancake on a serving plate. Spread with a little of the apple mixture. Repeat this procedure until you have the required amount of pancakes for each serving. Finish the layering with a pancake. Chill the pancakes until they are cold. Dust with a little icing sugar. On serving, cut into wedges for presentation purposes. If desired, you can also add a dollop of fresh whipped cream and a little ample syrup.

Remember on cooking your pancakes, do not have the element of your stove at too high a temperature. You do not want to burn either side of your pancake. It may take a little regulating, but you will find what temperature suits you. All stoves can be different.

Combine with your favourite coffee and wollah - devine!
