Cooking lobster is not the most pleasant experience for unseasoned cookers, for two reasons. Firstly you are cooking a whole animal. Secondly, if you cook it the right way and the best way, you are cooking it live. It is important to cook lobster when it is live because their meat goes off so quickly. Some studies show they suffer less if you chill them first, so utilize your fridge if you want to be humane! The two most common ways to cook a lobster are very simple, and this article illustrates how. It also has some helpful hints and yummy suggestions for side dishes.
How to a cook a lobster: Steam
You can use either salt water or salted fresh water for this method. Put two inches of your salt water in a large pot. Boil your water in on the stove. Many people place a grill in the bottom of the pot to keep the lobster entirely above the water. Once your water is boiling put your live lobster in, being careful of his nippers! Listen for the water to start boiling again and time your cooking from there. Below is a good time indicator for cooking.

Place the lobster in a large enough pot, filled 2/3's with salted water, as above. It is preferable if the water is boiling when you put the lobsters in. Use the table below to decide how long you will cook for. As above you should time your cooking time from when the lobsters are submerged and the water is boiling.

Softer shelled lobsters take a lot less time to cook (around three times less). Butter is the ultimate side dish for lobster, though it does decrease the healthiness. Never eat a lobster with a straight tail, this means it died before it was cooked.

1 lb.-1-1/4 lbs. (.45-.55kg) 15 minutes
1-1/2 lbs.-2 lbs. (.7-.9kg) 17-20 minutes

3-6 lbs. (1.3-2.7kg) 24-28 minutes
6-7 lbs. (2.7-3.2kg) 28-30 minutes
8 lbs. & up (3.6kg and up) 4 minutes per pound
How to cook lobster: Side-dishes
Lobster is a beautiful tasting meat that goes with many flavors. Don't match it with another meat, the tastes will clash. When you cook lobster think outside the square: stir-fried vegetables with a garlic sauce (lobster loves garlic!). Garlic bread is also complimentary. I like vegetarian nachos (with or without the chips). If you enjoy spicy food the two flavors just fit together great.
How to cook lobster:
Remember that cooking live lobster is not cruel. They are alive for a very short period of time. If you really don't want to cook them live you have two more options: kill them right before you cook them, or ask someone else to do the boiling for you. If you can't stand the idea of all the killing, you're just going to have to not eat lobster. The meat goes off too quickly for you to have them killed before you buy them, and you don't want to risk food poisoning!
